Pliny the Elder wrote about a number of Greek women who were painters, including Timarete, fifth century BC., Eirene, Kalypso, Aristarete, Iaia, and Olympias. While none of their work survives, there is a caputi hydria in The Torno Collection in Milan attributed to the Leningrad painter from circa 460-450 B.C. that shows women working alongside men in a workshop where both painted vases.

There aren't too many, I can only think of one .... Hildegard von Bingen. She founded several monasteries in Germany about the 10th or 11th century(can't remember exactly when). She's a VERY interesting woman, and she had some very strange visions. I think she is best known for her "chants" but she painted too (they may actually be illuminations). Either way....she was definitely an artist.

You could certainly argue that Wu Zetian

was an artist, because as a concubine, she would have made many paintings and silk screens.
