Your coolant level may be too low - or perhaps you have an air lock that's stopping the coolant from touching the temperature sensor. If the car's running low on coolant, it can overheat without the gauge going up at all - in fact, sometimes it actually goes down. The sensor needs to have coolant touching it to register the temp - being surrounded by hot air doesn't make it work. It's also possible that your thermostat is jamming. When it jams shut, the car gets too hot (overheat), and when it jams open, the car cools too much (runs cold.)

The thermostat is probably stuck closed and this causes a car to over heat, but the temperature gauge going hot then cool means that your water in the engine is low and you need more coolant!

Sounds like thermostat is stuck it opens and closes do to temp in motor it would be cheaper to change it your self make shure you get new gaskets for it also.

your cooling system is loosing coolant somewhere......it read,s hot when coolant touch,s the sensor......but read,s nothing when coolant drop,s enough so it doesn't touch the sensor......a cooling system leak can be enough in itself to cause an overheat situation.......your thermostat must be covered by coolant to function properly.....check your coolant level....then go to the nearest radiator shop to have your system pressure tested......good luck.
