Overt behavior is something open and obvious. Covert is something quietly or secretly done. Think of it as under the covers or something above the covers.

Jesus spoke openly in the Temple, that was overt. But the plotting and actual arrest was done in night, out of sight of the populace, that was covert. Judas Iscariot, secretly betrayed him, that was covert, but then he was practiced, trained even, to do things secretly. He was in the Iscaria, the secret assassins. They had a curved sword or dagger that they kept hidden in their clothes. With it they could be in a crowd and when their victim, say a Roman soldier or a Jewish informer, wasn't watching, they would swiftly stab and step away, hiding the knife from sight. This was covert. The Roman response, meanwhile, was usually overt, stand in front of the target and hack away with their short sword so that all could see.

"overt" is simply BLATANT and "out in the open" - where "covert" is HIDDEN and done discreetly or secretly. Now that you know the definitions, you should be able to make up any of a number of examples.

Overt behavior - I walk up to some one and slap him.
Covert behavior - I tickle his nose with a feather while he is sleeping, and he slaps himself.
