What exactly is a blindstitch sewing machine, and is this its only function?

It's a single thread machine (no bobbin) with a curved needle - you sew with the inside up, and it will make a very tiny stitch that is almost "invisible" from the outside. It makes a chain stitch that has to be tied off, otherwise you can pull out the entire hem in 2 seconds if you need to redo it.

It's particularly useful in situations where the hems may be adjusted for multiple wearers (theatre productions, costume & tux rentals, etc.) - and also for mass production.

The process can be somewhat duplicated on a domestic machine with the zig-zag type feature - it involves folding the fabric over and having the "zag" pick up a very narrow margin to produce an "invisible" stitch on the outside. This stitch, however, cannot be as easily removed.

A good seamstress can adjust the stitch so that even black thread won't show through on a white hem.

Most of the multi-stitch sewing machines will have a blind stitch as one of the choices. A blind stitch is a type of zig zag stitch that takes two or three stitches forward, then a stitch to the side. You position your hem so that the forward stitches go only into the hem, then the side stitch catches the fabric of the garment. You can see an example here:
