Actually, you bury it in the frontyard upside down, facing away from the house (this is symbolic for leaving). Once the house sells, you un-bury the statue and bring it with you to the new home. St. Joseph is the patron saint of carpenters (home builders in other words) and it is believed doing this will help in selling and bring good fortune in the new home.

The St. Joseph statue is a very popular superstition, but I doubt that it has any veracity to it. It gains popularity because folks do the burial and then the house sells, which it probably would have done anyway.
Besides, I'm sure St. Joseph isn't overly interested in whether or not a particular home sells.

You are supposed to say a prayer and bury it at the edge of your property, upside down and facing away from the house. I doubt it works but that's the traditional thing...there's a kit you can buy that has the prayer that you say and directions for burial if you look online.
