Its an interesting question you ask; the easiest ones to get parts for are the 68 to 70 models, they have become collectable now (unlike most AMC's save the Gremlin and Pacer models) and are starting to appreciate now that are muscle cars have begun to get over 6 figures for a fully restored example.
Now, the previous writer has suggested the 401 equipped models, this would be the second generation from 71 to 74 models, parts for these models are hard to come by and the frnt bumper is very hard to find in a straight condition. The 71 is least compromised by emissions, but the 74's with the large rubber snubbers protecting the body have the best bumpers (least likely to be damaged). The problem with this generation is that they aren't widely collected yet, so parts can be a major headache, especially for the interior. The flip side of this is that they are cheap to buy, but probably won't appreciate to any degree anytime soon.
The AMC Javelin from 68 to 70 was offered in a variety of engine sizes (I have seen one or two 6 cylinder models!), with most having either the 290 or 343 v8 with the automatic transmission. The 390 was available, though much rarer in the Javelin than the AMX. The 4 speed is a nice option to have, but in any case, see if you can find a model with the go pack option of disc brakes in frnt, heavy duty suspension, quicker steering. If you get one with disc brakes (highly recommended, especially with the 390), change over the 4 piston caliper to the single piston slider if you're going to drive it regularly. The 4 piston caliper is problem prone due to pistons sticking and causing uneven pad, braking and rotor wear. Be sure to check for rust around the rockers, rear windows, frnt fenders, doors, and floor pans in the area behind the frnt seats.. Body filler is used a lot on these, so a low rust or no rust example is worth a premium.
Values keep rising, look at Hemmings, The Gold Book, and even ask your insurance company what they think it will be worth. If your vehicle is real nice, have an independent apprasial to protect your self against getting a low settlement should the vehicle be damaged or stolen.

The AMC Javelin (and its little sister, the AMX) are both very neglected muscle cars. The "best" in my opinion would be any Javelin or AMX powered by the 401 c.i. engine with a four speed stick. That being said, they are beginning to appreciate and their value is rising; check Hemmings Motor News and/or Old Car Trader for representative prices. Good luck!

Javelins by AMC never had a good year.
IF you can find one, the owners usually pay you to take them.
The V-8 models were unexpectedly fast with the 343 engine.
The AMX is a collectible, sort of...
