I disagree with the answers you have gotten. Exclamation points are associated with exclamations. I associate interjections with dashes ("he went -- very quickly -- to his father's house") or maybe parentheses: His sister (my cousin) came to the party.
An interjection is something that is inserted in the middle of something else and interrupts it. The punctuation makes the reader recognize the interruption.
