You could discuss some of the changes that were made in Vatican II. However that might be too big a topic. You could always take one part of Vatican II and focus on that, like how it changed the rituals of Mass.

If you don't like that idea, try browsing some sites on Catholicism and see if you can't find something that sparks your interest. Just have fun with it.
