Why is it that Christmas and New Years are the only holidays that have Eves and Easter is the only holiday that is NEVER on the same day every year???

Halloween has an "eve," too.

Because in the translation Christians made of pagan holidays, they moved away from the holiday Eves, which for pagans marks the actual beginning of the day - sunset. Except that Halloween and Christmas, people have a tendency to remember.

New Year's is because the important point of time is midnight. Purely secular there.

Easter moves around the calendar because it's the first Sunday after the first full moon after the spring equinox - another pagan way of reckoning the feast day.
