If you've never done Disney, then it's not to be missed. There is nothing like it. Otherwise I recommend a couple days at Busch Gardens, which has a much more "local folks" feel to it than Disney and features midway type rides, not the elaborate "animatronics and special effects" tours that WDW offers. It's a great big old fashioned wildlife park-zoo with rides scattered through out. It's quieter and slower paced than Disney and the prices for food and souveniers are about what you'd pay at Subway or Olive Garden, K-mart or CVS.
If you get to the Gulf Coast, renting Kayaks at Lover's Key (south of Ft Myers Beach) or Isle of Capri (near Marco Island) are must if you're a nature lover. Please don't do the airboats; the noise and pollution are bad for our fragile Everglades and these huge, speeding hulks run over plants and animals, injuring and killing them.
The drive along A1A from St Augustine to Ormond Beach is the best Atlantic Beach drive in the state. Flagler Beach is great place for an overnight stopover, quiet, friendly, safe, a real slice of the 1950s Golden Age of the Florida roadtrip. I especially like the Topaz Motel, with it's display of antique autos.
There are two good beaches east of Orlando. Cape Canaveral National Seashore and Merritt Island National Wildlife Refuge are remote and primitive. The closest lodging would be in Titusville, on the mainland, about 30 minutes from the ocean. Don't miss watching the sunrise from the Wildlife Refuge, where the sun turns the marchwaters an amazing red with the HUGE structures of the Kennedy Space Center eirily looming in the background.
Cape Canaveral and Cocoa are busy resort towns, with hotels right on the beach, and plenty of supermarkets, restaurants, and specialty shops. Bicycle rental at Ron Jons's is reasonable and the beaches are ridable at low tide.
If children are part of this, you might want to plan carefully for any ventures into Miami's South Beach or Key West's "special" districts. Topless sunbathers and same sex couples holding hands are among the milder sights some parents mights want to avoid. Fairchild Tropical Garden, Everglades National Park (rent ocean kayaks or take a guided boat tour), and snorkeling (or riding a glass bottom boat) in the mid Keys not to b missed. There is also a Dophin center nearby were you can swim with these gentle, intelligent creatures, but it isn't cheap. Chose the facility with "free" volunteer dolphins who are not captured in the compound. These dolphins visit the center because they enjoy the interactions with humans, not because they are captives forced to perform for their food.

Orlando is fun. There is actually a lot you can do there for free. Go to downtown disney, ride the monorails around to see all the sites, go to Fort Wilderness (disney campgrounds) the buses will take you all over. Plus, there is FAO Swartz, Ripley's believe it or not, Worlds largest McDonalds (lol), etc. Then there's Clearwater where I'm from. It right next Tampa right on the water. We have an amazing beach plus you're close to Tampa so there's shopping, restraunts, clubs, bars, tons to do.

Orlando is good because of Disneyworld and the other theme parks in the area. Miami is good because of the beach and nightlife, you see a lot of celebrities there.
