99% of the gas in farts is the same as the mixture in air. it's the other 1% that is different and causes the odor

Its methane gas, which is always given off whenever organic material decomposes in the absence of oxygen (like in the digestive tract).
If it decomposes with oxygen present, then other organisms get to work, and the gaseous byproduct is CO2.
