Yes they are. Although the later one's, such as Guitar Hero 3, feature different kinds of multiplayer modes, they all have the multiplayer availability.

Yes, though the original only had head-to-head play on the same difficulty. GH2 introduced head-to-head where you could each pick different difficulties, as well as co-op, where one is on lead and the other is on rhythm or bass, bepending on the song.
