Why are race, religion, and politics considered taboo subjects for conversation?

Because within each subject, you'll find lots of people who have diametrically opposing convictions. And it is nearly impossible to change people's viewpoints about those subjects.

With the exception of discussions with close friends, I have learned the hard way to not even bother.

Because what if you say something that directly contradicts what they think? For close friends, I think politics is fine (or should be fine), but other wise no way on of those subjects. It's just not comfortable. If by "race" you mean countries and stuff like that, that's acceptable, just don't go around saying how much you think some country sucks.
