Hey, Y'all
I purchased a bay plants this year and I was wondering it you can use fresh bay leaves in place of dried bay leaves? Are the fresh bay leaves stronger than the dried? I've only ever used dried bay so any info. about fresh bay would be greatly appreciated.

While most herbs ARE better when used fresh, Bay leaves are the exception. I have included a link for you to check this out. They are better dried but used within a year of drying. Press them under something heavy while drying to keep them flat if desired because they will curl. I have grown and propagated Lauris nobilis for many years.

You can also pick the, let them dry and store them in a glass jar for when you need them. By the way, the secret to growing a bay tree is top light, that is, as much light from above as possible, or good direct sunlight . I have one that is nearly 15 years old. I have also found that they like to go through a semi-dormant state in the winter. I water mine good in November when I bring it in, and only about once a month thereafter until about March, then I resume my normal watering and it does fine. Just don't forget to start watering it again because whe it comes out of dormancy and starts to grow, if the water is not there, it will die.

You might see bay leaves under the name Ojas de Laurel, if you look in spanish cook books. Put one or two in a pot of beans.

Yes, any fresh herb will be stronger than a dried version. Maybe use a little less. Simmer it in your spaghetti sauce. Yum!
