Pepsin is stored as pepsinogen so that it will only be released when needed, and does not digest the body's own proteins in the stomach lining.

Think about how you feel when you have too much acid on your stomach. It feels like your stomach is eating you. That's exactly what happens if too many digestive enzymes are active at one time. As it is your stomach has these controls in the form of inactive peptides, but already has to reline your stomach at 3x the rate of other organs, so it's an added safety measure.
