COCONUT RICE
2 tbsp. oil or margarine
3/4 c. chopped onion
4-5 whole cloves
2 cinnamon sticks
5 cardamom buds, crushed (optional)
3 whole bay leaves
1/8 tsp. ground fresh or powdered ginger
2 cloves garlic, mashed
1 c. unsweetened coconut milk
3 c. water
2 c. rice
1 tsp. salt
1/4 cup cashews (optional)
Heat oil or margarine in a heavy saucepan. Add onions and fry for 1 minute. Add cloves, cinnamon, cardamom, bay leaves, ginger and garlic. Fry until light brown. Add rice, coconut salt and water. Bring to boil; reduce heat, cover and cook for 30 minutes or until rice is done. If desired, cashews can be added. Serve with chicken or beef curry or with yogurt chutney.
Makes 6 to 8 servings.

Freeze it in an ice cube tray, then put the cubes in a blender with a banana and a tsp of vanilla....you may need to sweeten to taste. YUM
Oh, and if it's condensed, add a few regular ice cubes to taste.

i personally really love cocoanut milk and i had a thai woman stay at my house for a couple of days and she made us 5 things and like all of them had cocoanut milk in them so go to foodnetwork.com and look up thai resipies they were really good!
