I've traveled to New Orleans many times.... I'll probably miss some but here are the places I've stayed:

French Quarter
Hotel St. Marie - Excellent location in the heart of the Quarter. Decent rooms and usually decent prices. We had a large balcony overlooking Toulouse St. The only downside is the front desk staff. I've found them to be less than cheerful.

W Hotel - This upscale hotel is also in an excellent location. It is somewhat pricey, and although very nice it lacks a certain charm that you would expect in a FQ hotel. The courtyard is nice though.

Chateau Sonesta - Our room was quite large with a very high ceiling which made it appear larger. It was sparsely furnished though. Our room had french doors which opened to a large courtyard which was a nice touch. Location-wise, not bad but I prefer places a little closer to Jackson Square.

Quarter House - This is a timeshare place but you can book rooms here. The lobby & halls seemed to me a bit dirty, but the room definitely had that New Orleans charm, brick walls, ornate furnishings, etc.

Inn on Bourbon - If you want to be in the middle of the party atmosphere this is the place. You'd think that a place in the heart of Bourbon St would be more dirty and run down but that is absolutely not the case here. The lobby is "old world" with very nice furniture and surprisingly quiet (during the day). Prepare to hear music all night though.

CBD (Central Business District)
Omni Royal Crescent - Great "romantic" hotel. The rooms really have that New Orleans feel.

Le Meridian (now JW Marriott) - This place on Canal St. changed to a Marriott after we stayed there. I'm not sure what has changed, but at the time it was a nice place. Large lobby with a bar inside. The room was large with a nice bathroom.

Pelham Hotel - Yikes. Our room had no windows. I had never experienced that before and will never again. It would have been nice if I would've known it beforehand. I'm sure there are room with windows but if you do choose to stay here make sure you request it.

W Hotel - This W hotel is different than the one in the Quarter. The lobby is much larger and the rooms are very nice. As is the the case with all W Hotels, the bed was out of this world. Very comfortable. This hotel also has a nice martini bar.

Warehouse District
Ambassador Hotel - Stayed here a few years ago. The room was nice, had wood floors and brick walls.

Wyndham Riverfront - This is your typical chain hotel It was a short walk to the Quarter and is across the street from the Riverwalk mall.

Hampton Inn Convention Center - I've always had good experiences at Hampton Inn's, and this was no exception. The best feature of this place was the free full breakfast in the morning. It's a long walk to the Quarter so I'd recommend a cab.

Gretna
Holiday Inn Westbank - We stayed here because of the price (it was during Mardi Gras). Typical Holiday Inn. It's across the river from New Orleans - they had a free shuttle to the ferry.

For the fun of it, here are some of the places I'm considering for future trips: Royal Sonesta, Place d' Armes, Soniat House

1. The Ritz Carleton - On Canal St. next to the French Quarter and is not as nice since the Hurricane
2. Pontchartrain - in the garden district but close to the CBD and quarter, it's extremely old but has a great Mile High Pie
3. The Loews - I just stayed at this hotel because I got the best deal and I was extremely impressed by the cleanliness, large size of rooms and everything that goes into a really nice and new hotel. But don't eat at the restaurant in the lobby.
4. The W - small rooms but charming, directly next door to Harrah's Casino and the Loews Hotel, whiskey blue (lobby bar) is great for the posh group of people.
5. Hotel Monteleone - in the quarter and one of the oldest and most haunted hotels in NOLA is old and wouldn't recommend staying there but its worth a visit to the Carousel Bar.
6. The Windsor Court - the most world renowned hotel in New Orleans; however it is expensive and old and the rooms are dirty but the restaurant is amazing. It's in walking distance to the French Quarter and the service is impeccable.

I stayed at Chateau LeMoyne on Dauphine Street. It's 2 blocks from Bourbon street so it takes 5 minutes to walk there yet it's far enough away that it's quiet at night. the rates are more reasonable then any other hotel I looked at. I was happy and plan to stay there again.
