A thickening...You can buy it in most gro. stores. I make my own.

I live in Louisiana. I gather the leaves from a sassafras tree either in the spring or fall and let them dry. I grind them to a powder and sift. This is how file' is made. We use it in gumbo mostly.

Its ground sassafrass leaves.
A very common ingredient in cajun cooking. If you watch Alton Browns series on the Mississippi river and the towns around it you would have seen him discuss how important file is and why and how its made.
