I have to make this for thanksgiving and Christmas every year or people throw a fit LOL...It was passed down from my grandma...to my dad...and now to me

SOUTHERN GREEN BEANS

1/2 pound bacon
4 c. water
2 lbs. fresh green beans or 4-5 cans
1/2 tsp. sugar
Salt and pepper to taste
1 clove fresh garlic or 1 tsp garlic powder
1 small onion chopped

Place bacon in large saucepan with water. Bring to boiling; reduce heat, cover, and simmer for 30 minutes (or cut up bacon and microwave, adding bacon and grease to water with beans). Wash beans and trim ends; break into 1 inch pieces. Add beans and sugar to bacon. Cover and cook over very low heat for 2 hours. If necessary, from time to time, add water just to keep beans from sticking. Taste during last hour of cooking and add salt and pepper if needed. About 15 minutes before serving, sift about a teaspoon of flour into the pot; stir it well into the juices in the bottom, then resume cooking the beans. This coats the beans ever so slightly and there is never a drop of clear, watery liquid to remain in a puddle in bottom of pot.

INGREDIENTS
8 potatoes
2 tablespoons butter
2 cups all-purpose flour

DIRECTIONS
Bring a large pot of salted water to a boil. Drop in potatoes and cook until tender but still firm, about 15 minutes. Drain, cool slightly, and peel. Mash potatoes with fork, masher or in ricer. Place in large bowl and make a well in the center. Put butter in well and allow to melt. When mashed potatoes have cooled, knead in enough of the flour to make a soft dough.
Divide dough into fist-sized portions. On a floured surface, roll each portion into a long rope. Cut the ropes into one-inch pieces. Roll each piece with a fork for a distinctive texture.
Bring a large pot of lightly salted water to a boil. Drop in gnocchi and cook for 3 to 5 minutes or until they float to the top; drain and serve with tomato sauce.
