when we get off the ship in port ( say, Nassau ) and want to go on a snorkling trip or whatever, do they take credit cards, or do we need cash or travelers checks or what?

I was just there in August. We booked our excursion with the cruise line. It costs a little more but they take care of everything and there is comfort in knowing that if something happens during your excursion that will cause a problem getting back to the ship on time the ship will be notified and if it is cancelled due to weather or other problems the ship will refund your money right away. You can also book these ahead of time. Contact your travel agent or the cruise line.

As for money, we used our credit card however in some cases if you are buying something from a local then you will need cash. They accept the US dollar with no problem. Take lots of $1 or $5 bills for any tipping. I do suggest taking travelers checks as well. We cash them in as we need them at the ships casino or pursers deck thus avoiding the ATM fees and any credit card cash advance fees.

It depends - some vendors would take cards, some would want cash. Check with the vendor, if you know who it will be.
