Mayonnaise is the name given to a combination of oil, raw eggs and an acidic juice such as lemon, and salt. When blended, the acid curdles the eggs and the oil makes the curdled eggs spreadable. All real mayonnaise is, in fact, egg mayonnaise, because, as I said at the beginning, "mayonnaise" is the name given to the blended product of oil, eggs and lemon juice.
If you wish to flavor your homemade mayonnaise you made add such things as ground black, red or white pepper, onion powder, garlic powder, paprika, sugar, or other dried, ground herbs or spices before the eggs, oil and lemon juice are blended. Minced pickles, pimentoes, leafy herbs, etc. are folded in after the mayonnaise is made. Homemade mayo is usually blended with a blender or food processor, but it can be made using a french-whip if you are willing to expend the energy and time. When making your mayo, be careful not to over blend as it will liquify and become pourable mayo rather than spreadable mayo. Unless you are particularly fond of the taste of olive oil or other oils which have a strong flavor, it is adviseable to use a bland oil. Peanut oil is a better choice because it is a mono-saturated fat and has a bland flavor. Poly-unsaturated oils such as safflower, sunflower, canola, corn and vegetable are OK too because they have a bland flavor.
You'll find recipes for the correct proportions of oil, lemon juice and eggs in cookbooks and at cooking web sites. Lime juice can be substituted 1-to-1 for lemon juice. Lime juice is my personal preference. You will also find recipes using other acids such as vinegars and cream-of-tarter.
Remember also that homemade mayo does not have the stabilizers and preservatives that commercial mayo contains and will only keep a week or so.

A simple Egg Sandwich Recipe anyone will love with a thick spread of chopped up boiled egg with plenty of Mayo.
Ingredients:
2 Slices of White Bread
1 Boiled Egg
Mayonnaise
Instructions:
1) Lay one piece of bread on your chopping board and chopping up one boiled egg nice and thick into a mixing bowl or dish.
2) With a table spoon, add plenty of Mayo to the chopped egg in the bowl and stir thoroughly until egg is completely covered in Mayo.
3) Add plenty of Egg Mayonnaise mix onto bread and eat right away.

Egg Mayo??? Mayo is made from eggs, oil & seasoning... it needs an acid so, some use lemon... some use vinegar
Home Made Mayonnaise
2 egg yolks
2 tablespoons mustard
Dash salt and pepper
Squirt of lemon juice
1 to 1 1/2 cups oil
Put ingredients in blender, and blend slowly, adding oil until you have desired consistency.

I"ve never heard mayo called "Egg Mayo". That was good for a chuckle.
To make mayo, you put an egg in a blander or Food Processor. Add a bit of salt, a bit of vinegar (1 tsp?) turn it on liquiefy, then slowly add about 1 cup of oil.
So yes, it's egg, oil, and a couple seasonoings.

Raw eggs and olive oil with a touch of lemon juice,,,they are the ingredients of Mayonnaise,,,just add a couple of halved hard boiled eggs and a sprinkle of maybe lemon juice, chopped parsley or some sea salt,,you could also sprinkle a little paprika or mild chili powder,,,a lettuce leaf is good ," little gems" are OK for that

Here in the UK, egg mayonnaise consists of hard-boiled eggs, covered with mayonnaise, and sprinkled with paprika. You can buy plates of it with salad in supermarket cafetarias, or for our Church lunches it is prepared on a large platter, and served as part of a buffet.

homemade mayonnaise consists of vegetable oil and raw egg yolks separated from the whites. always has been. it is necessary to whip the mixture, aerorating it as you do to make whipped cream. a very old receipe that has not changed for centuries. everything else is a personal variation. that is the gospel. you damn sure don't boil eggs! nobody got this one correct but me. i am amazed at these wrong answers. people will blurt out anything on yahoo.

i guess you can put in what ever you fancy! I like fresh herbs, like chives or oregano. you could add a little garlic, or spice it up with a little chilli, or curry paste, cucumber. or you could just stick with the freshest eggs you can buy, preferably free range, cos you wouldn't want some creature to have suffered just for the sake of a sandwich would you! good quality mayo, pinch of salt,and ground pepper. the breads important too, but a matter of taste, go for wholemeal meself, but others swear it ain't right unless its white!

As I am not remotely healthy, I soft boil 3 eggs, cool them, mash them with butter, salt and black pepper, then mayo to my taste in consistency, sometimes a little paprika, also salad cream to adjust the flavour somewhat on occasion. I do chuck a bit of lettuce in there to help it look healthier! lol
