If you had a fight with somebody and wanted to bite their cheeks or nose off, could the police analyse the marks and trace them by dental records to you? Or would this be unlikely due to the rough nature of the wound?

Basically, could I get away with biting someone's face apart?

No you couldn'y get away with it for many reasons. First unless you are a stranger the person could identify you. Second there are possible witnesses. Third there is DNA. Fourth, this is actually several together, You have to wait until you get adult teeth to be strong enough, and lastly your mother doesn't let you cross the street alone.pp

O.K. Psycho Silence of the Lambs, yes you can get caught and they can trace the marks back to your pearly whites so keep your teeth to yourself and get another hobby or possibly some counseling
