smoked sausages (or meatballs) in sauce made from one bottle honey barbecue sauce, small jar grape jelly, few squeezes yellow mustard. mix all together in crockpot on high

mini sandwiches made from small dinner rolls in the aluminum pans. take the whole block of rolls out without breaking. take an electric knife and slice the rolls in two in the middle. now fill with your fave toppings: ham, turkey, cheese, pimento, whatever. you can put mustard and mayo if wanted or have sauces to the side.

rotel dip made from one block of velveeta and a can of rotel tomatoes, can add a pound of ground beef if desired. serve with tostito chips, veggie sticks.

Mini empanadas are always great finger foods (small meat pies). Get the frozen dough discs at the supermarket. I use the Goya brand. Before starting, leave the discs out at room temp for an hour to defrost. You can fill them with meat or cheese, but for your potluck I would do meat since these taste fine at room temperature. You can get 20 mini empanadas from a pack of 10 discs. You can fill two 10 disc packs with 1 pound of ground beef. For the meat filling: Brown a pound of ground beef. Drain. Add 1 diced onion, 4 cloves of minced garlic, and half of a small finely diced red pepper. Stir and saute for about 5 minutes on medium heat. Add 1 tablespoon of tomato paste or 1/2 cup of tomato sauce. Mix well. Season with 1 1/2 teaspoon kosher salt, pepper, tsp of oregano, 1/3 cup finely chopped cilantro. To give the meat mixture moisture you can add 1 tablespoon of extra virgin olive oil OR 1/3 cup chicken broth or water. If using liquid, let it reduce down a little. Once meat is done and has cooled a bit, take one pastry disc, cut it in half, and add a teaspoon of meat to center. Fold edges over to form a small, triangular pie, and seal edges by pressing down with a fork. Fry empanadas in 3/4 cup corn or vegetable oil till golden brown on both sides. Drain on paper towels and keep warm in aluminum pan in oven at 200 degrees until it's time to go. These taste fine after sitting out for an hour or two at room temp, and believe me they won't last that long. It sounds like alot of work but you can do the meat the night before to shorten preparation time.

Phyllo Wrapped Asparagus

8 or 9 asparagus spears, depending on size
1/2 (16-ounce) package frozen phyllo dough sheets, thawed
1/4 cup butter, melted
1/4 cup finely grated Parmesan

Preheat oven to 375 degrees F.

Snap off the tough ends of the asparagus. Unwrap the phyllo and cut the stack in half lengthwise. Reserve 1 stack for later use. Cover the phyllo with a damp towel to keep it from drying out. Take 1 sheet of phyllo and brush lightly with some melted butter. Sprinkle with some Parmesan. Place 2 to 3 asparagus spears on the short end of the sheet. Roll up, jelly-roll style. Place each piece, seam side down, on a baking sheet. Brush with more melted butter and sprinkle with more Parmesan. Repeat until all the asparagus spears are used up. Place baking sheet in oven and bake for 15 to 18 minutes, or until golden brown and crispy.

Will depend on the context really. Which is better as a snack - fresh fruit to me. It's tastier and gives you that tad of sweetness. Which can be better as a snack if you are trying hard to lower back on sugar and lose weight vegetables

pickle spears with a ham slice spreaded with cream cheese rolled up. sometimes you can put a crundhy breadstick in there too.
