Everyone cant enjoy all food. Each one of us wil have likes and dislikes and acordingly food that they simply cant or wont eat/enjoy. So my question is, will a chef prepare meals comprising food they dislike, and if so, how do they know if it tastes good or not(assuming they taste it as they go)?

he or she learns how a thing ought to taste when it is well prepared.You can loathe it but still get it right once you know what "right" is.

That's why chefs go through training to learn the basic techniques of cooking different meals. Part of that training is also tasting different foods. I am not a professional chef, but I went through some training. I can not stand a wanna-be chef that refuses to cook something or even taste something because they don't think they will like it. When you hear people talking on cooking shows about someone having a good palate that means that they have a strong sense of taste and they can pick up flavors in a dish. A good palate means that you should be able to taste if something is under or over seasoned or the wrong texture. It shouldn't matter if you actually like the food or not.

I had to cook foods I didn't like for work. I did occasionally have a taste, but I mostly went by smell. If it was fragrant and smelled good, and looked good, and I followed directions, I assumed it would be good. Taste is only one part of the senses.

Chefs make what people order. As they already know how combinaitons work together tastewise, this is usually a non issue.
I have made several dishes for clients who asked for things I don't eat due to calories, ect. But I know, from having prepared them multiple times, they will be great.

Good ingredients, properly prepared taste good...there are many things that I thought I did not like until I discovered how to prepare them properly
