Lets say I'm riding my bicycle and a car throws lets say a soda bottle or a cd at me. What exactly am I allowed to do? Obviously I can't chase and take a picture of the car.

Another question is lets say I get 'attacked' by someone with a knife. I'm allowed to use a weapon equivalent to his/her knife correct? How do laws work on what I can do to protect myself in terms of how I do it / what I use?

Well you cant follow them but you can report the car to the authority's

As for your knife question you can do whatever you must to defend yourself

Keep a snap on case on your handlebars with a pen and notepad. Pull your bike over to a safe spot, off the road.
Note the color of the car on the paper, the type of car, and the plate state and tag number. In other words anything you noticed about the car. (if you have a bag and the item is near you, pick it up carefully, and place it in the bag. (It might have fingerprints on it.) When you get where you are going,
call the police and report the incident. Give them the information and the item.
Check with the local police in your area on how they suggest
one should protect himself in the attack situation. In some areas some sorts of self defence are frowned upon. Take a local defence class. It will prepare you, and might save your life if an attack should occur.

If someone throws something at you, you should try to get the plate number and description of the drive and call the police. This is an assault with a weapon.

If someone attacks you with a knife, you will certainly fear imminent serious bodily harm or death and are allowed (in Canada at least) to use force that is likely to result in serious bodily harm or death to the attacker. Police officers are trained to counter knife attacks (when there is enough time and distance) to draw and fire their firearms. You don't bring pepper spray or battons to a knife fight.

The laws are wide and varied from state to state. Generally though, you can defend yourself using reasonable methods only for so long as the other person is actively attacking you. Once the attacker turns to leave, you can no longer do anything. Oh, and I think you can take a picture of the car if it is in a public place.

1) RIDING BIKE AND HE THROWS AN ITEM OUT (LITTERS.) GET THE LICENSE NUMBER AND REPORT IT. ALSO COULD BE ASSAULT, INTENT TO HARM OR MAME.

2) THE ESCULATION OF FORCE THEORY IS THAT YOU CAN GO ONE LEVEL HIGHER THEN THE FORCE BEING USED AGAINST YOU.
WITH THAT SAID, A KNIFE WOULD PUT ONE AT PERIL TO BELIEVE THAT THE PERSON IS GOING TO GREAT BODILY HARM IF NOT THE EMINENT FEAR OF DEATH. THUS I WOULD SHOOT THEM AND NEVER BLINK AN EYE.
ALMOST ALL STATES NOW RECOGNIZED THE THEORY OF SELF DEFENSE AND HAVE CHANGED THEIR LAWS TO REFLECT SO BASED UPON GANGS AND CRIMINAL ACTIVITY AND YOUR RIGHT TO BE FREE FROM HARM AND THE RIGHT TO PROTECT YOUR SELF.

you can take the pics and report to the cops.

the sec.
you can fight back, u can use an weapon. but dont kill him. only kill him if you get hurt real bad but if you did this you must not leave him report to the cops that you protected your self because he tried to kill him, but in the process of protecting yourself he died.. and if you get into trouble say you are defending your self
