Because they want to explain away. Their wisdom might seem right because there age matches what wisdom they have. As a parent we are older and have seen more, so our wisdom is much more.
I would not make a big deal about them talking back. I would stop it with a talk b4 they talk back, so their wisdom can hear and see where you are coming from in their terms of understanding.
For example we get on the same level with a toddler so they will have our attention and direction, we need to walk in teenagers shoes too, but have the wisdom that will keep them safe.

As they don't want to be blame, it's just like this. If someone scold u, u will automatically do a self defence and making up thousands of reasons and explanations, it's a human nature. Maybe the way you scold them make them feel uneasy and try to find black sheeps. Just the way you used to be when youre a kiddo I guess. When ur a kid u hated ur parents for scolding u. And now ur a parent. Yeah, parents never know or feel anymore the feeling of childhood. Just like butterflies never remember that they used to be worms....

they don't want to be blamed for any mistakes. they are thinking of stories to make what they did okay. They want to not be talked to anymore so they manipulate you to believe what they want to so they can get out of listening to you or being punished. the child might also feel that you aren't understanding everything. Best thing to do is let them explain right away, and anything that is explained after that could be a lie or manipulating.

As Bill Cosby says, "All kids have brain damage." That is the only explanation I can come up with for why my son does half the stuff that he does.

It is a process called separation-individuation....it is how they learn to differentiate themselves from you - in other words, how they develop their own personalities.
Be well
