The premise of evolution is that over time, specific characteristics caused certain parts of the population to thrive, whether it was an ability to survive a harsh condition or a trait that caused females to prefer one potential mate over the other. You do see this tendency in animals today. Female lions prefer males with darker manes, and darker-maned lions tend to be more protective fathers. Thus, over time more lion cubs will survive and carry on the darker-maned gene, and (barring human interference) there will be more darker-maned lions than lighter-maned ones.
George Clooney's face is the result of generations of men being found attractive by generations of attractive women. Over many, many years, you get a face like that. Yeah, I think that's evolution in action.
And for the people who can't seem to get this straight, the theory of human evolution does not say we are descended from modern animals. It says that we and modern apes (not monkeys) share a common ancestor.

I believe that's the reason his face is so attractive to females. Those possessing qualities that are attractive to the opposite sex are invariably going to pass those genes on.
