Because religious people who use this argument cannot imagine that the universe formed without an intelligent process guiding it. What they mean is, "the world is so perfect and pristine that it must have been designed."
They mostly look on the surface too much, and don't dig deeper and realize that the universe is complex and organized for a reason that doesn't include God, but instead the application of very simple fundamental laws.
The same goes for evolution: you can easily discount it by being shallow-minded and not look into why things take place, but rather the result, which gives the illusion of design.
Take 'Fireball' for example...

I know that you are thinking of all the bad stuff that we see- however if you open the eyes of your heart and ask God to show you Himself He will. Creation is proof enough for me. However, there is much more proof- you can see God when you give your heart to Jesus- Call me crazy if you want- but it is true-

But it's a sure fire sign that the Christian hasn't got any proof that they resort to such a lame attempt. They're attempting to say, "but this is so complex it MUST be designed," without realizing that complexity often arises from the application of extremely simple rules.
Witness the infinitely detailed Mandelbrot set, generated by two simple rules... an addition and an exponentiation.
