the recipe is for a dessert and the egg substitute is to be mixed with confectioners' sugar and butter, and will not be cooked. can i use fresh egg or does the substitute have some different qualities to it?

The recipe calls for egg sub b/c it will not be cooked, and egg sub is pasteurized. You can sub a real egg, just make sure anyone who may eat it who is immunocompromised or pregnant knows there's raw egg in it.

Egg substitutes generally are egg whites that have been pasteurized. Although you can substitute a whole egg, you might take into consideration the amount of liquid and the pasteurization process. When I was growing up we thought nothing of eating raw eggs in smoothies, meringues, egg nog, etc. But nowadays, folks are a lot more cautious!

you can sub it w/real egg, but you would have to cook it first. Over a double boiler, on low heat, briskly whisk the egg until it reaches a temp of 125-130F. This is pasturization, and will kill any bacteria present in the egg.

If it isn't going to be cooked then there is a salmonella risk. Pregnant women and children are advised to steer clear of raw egg.

egg subsitute sound just nasty! but yes you can use whole eggs in baking.. if you need either the white or the yolk just separate them and carry on baking.. 1 egg white equals about 15 ml so keep that in mind.. the same for a yolk.. have fun!

It should be fine. Some people just don't want to use eggs because of cholesterol reasons.
