Hi!! Some of my friends in my Bio class and I are doing this thing where each of us takes turns bringing in a snack on Fridays. I need a no-mess food that I can keep in my locker until right before lunch. It needs to be easy to make cause I'm not exactly an advanced cook. Thanx!

mixed nuts are a good choice, some with beef jerky. Chips are another idea. What about carrot and celery sticks? Cookies?

Here's a simple one.

Graham Crackers with Cream Cheese Icing

3 C Confectioners sugar (or more)
4 oz cream cheese
6 Tablespoons (3/4 stick) butter (or margarine, but not spread!)
pinch salt
1 teaspoon vanilla extract (or almond extract, or rum, brandy, orange or lemon extract, whichever you like best)
1 pack graham crackers

Bring cream cheese and butter to room temperature and mix together with a fork until creamy. While stirring, add sugar little by little. After incorporating about half of the sugar, add the extract and stir it into the frosting. Continue stirring and adding sugar until you have the frosting at the spreading consistency you like. (It may take more than the 3 cups of sugar. And if it gets too thick, add water, just a few drops at a time.) This recipe makes enough icing to cover a 9"x13" cake. How many cookies you can ice depends on how much icing you like between (or on) your graham crackers.

Break the graham crackers into squares and frost half, then use the other half to top them like a sandwich cookie, or just frost squares. (It's easier to package and carry the sandwich type.) Seal the cookies into a zip-type plastic bag. They will stay fresh for about two days, unless the weather (or your locker) is very warm.

Crunchy Cheddar Bites

1 cup all-purpose flour
1/2 cup butter, softened
1 cup (4 ounces) cheddar cheese, shredded
1 cup toasted rice cereal
Heat oven to 400°F. Combine flour, butter and cheese in large bowl; mix until dough forms. Stir in cereal until combined.
Shape dough into 1-inch balls. Place 2-inches apart onto ungreased baking sheet. Bake for 10 to 15 minutes or until golden brown.
Makes 3 dozen bites.

Tip: If the dough is difficult to mix with a spoon, mix ingredients together with your hands.

Tip: Use ruler to double-check the size of the unbaked balls as you form them.

Cheesy Onion Roll-Ups

INGREDIENTS

* 1 cup sour cream
* 1 (8 ounce) package cream cheese, softened
* 1/2 cup shredded Cheddar cheese
* 3/4 cup sliced green onions
* 1 tablespoon lime juice
* 1 tablespoon seeded and minced jalapeno peppers
* 10 (6 inch) flour tortillas
* 1 (16 ounce) jar picante sauce

DIRECTIONS

1. In a medium bowl, mix sour cream, cream cheese, Cheddar cheese, green onions, lime juice and jalapeno peppers.
2. Spread one side of each tortilla with the sour cream mixture. Tightly roll each tortilla. Place rolled tortillas on a medium serving dish and cover with plastic wrap. Chill in the refrigerator at least 1 hour.
3. Slice tortillas into 1 inch pieces. Serve with picante sauce.

If you do make the cheese bites, you can cheat by using a melon-baller to make the 1-inch balls instead of continually checking the size with a ruler :))
