I want one with less fat and less cholesterol?

I don't think the oil I use affects whatever I cook, so yeah. Thanks.

and please don't say olive oil. because that is not one of the choices.

Canola oil is the best for cooking. You should use extra virgin olive oil for things like salad dressings and marinades. Both have very little cholesterol and no 'trans' fats, and they are now the 'recommended top' of the list of 'oils or fats' ... but you should also get some 'Omega 3 fats' (from many fish, or take capsules) and also some Flax seed oil if you what to get healthier more quickly.

Just to correct what was probably a mistype by one of the answerers: canola oil is a poly-unsaturated oil, not a mono-saturated oil. Canola's claim to fame is that it has the highest ratio of unsaturated fats to saturated fats of all the poly-unsaturated oils. To reconfirm other comments: Current research indicates that mono-saturated fats are the most healthful. Peanut oil is an excellent choice for frying. It's inexpensive, has a high smoke point and is bland. Olive oil is a good choice where you wish to have it's flavor contribute to the food. A quick check to see if an oil is poly-unsaturated or mono-saturated is to place it in the fridge for a couple of hours. Mono-saturated oils cloud up and become more viscous; poly-unsaturated oil stay clear and thin. Of course, saturated fats are the ones that are solid at room temp.

the oil that you cook with all depend on what you are cooking if you are frieing something like poultry then Peanut oil is the best if you are cooking vegs then corn or vegetable, and if you are using any thing else it would depend like pasta cooking is good in canola and peanut.

They're all equal in fat content but Olive oil is best because it has Omega 3's in it.That's found in fish.

if your asking for health reasons the absolute best is olive oil.

they all have the same basic properties in terms of calories, cholesterol, etc. but sunflower would be my pick out of that list
