You should make something that excites you...hamburger, tacos, pizza, etc. Have fun cooking while listening to your favorite music....dance a little....set the table....cooking is fun! How about hamburger patties, salad, baked potato with sour cream and butter, and good french bread. You could put some BBQ sauce on the pattys to spice it up a bit.

make baked spaghetti
8 ounces Spaghetti or Linguine, uncooked
1 large Onion; chopped
1 clove Garlic - peeled and quartered
1 pound Lean ground beef
14 ounces Canned tomatoes; undrained
10 ounces Low-sodium tomato sauce
1 1/2 cup Water; divided
2 teaspoons Italian seasoning
1 1/2 teaspoon Salt
3/4 cup Grated Cheddar cheese or Monterey Jack cheese
Directions:
In a large frying pan, cook onion, garlic and ground beef over medium heat until beef is browned; drain. Add tomatoes, tomato sauce, one cup of water, Italian seasoning and salt. Simmer for 5 minutes, stirring occasionally.
While meat mixture is simmering, break spaghetti strands into three parts. Place in an oven-proof casserole dish. Add another half cup of water and mix. Add meat mixture and combine all ingredients. Cover the casserole with aluminum foil and bake at 350 degrees F for 40 minutes. Uncover casserole and bake for an additional 10 minutes.

Meatloaf or Spaghetti are pretty easy to make. Chicken Cacciatore is good.
Also, don't forget the side servings. Something to make a salad; or a bag of frozen green beans or corn that you can easily cook in boiling water. And a loaf of Italian or French bread.

Yeah, my vote is pasta. Get some Ronzoni spaghetti and a bottle of Ragu. Boil, cook, drain the pasta and microwave the sauce. My wife cooks like this at least once a week - fast and easy.
Oh, and get a loaf of itallian bread with some butter, and some romano to shake on the spaghetti.

Chicken Kiev
Take chicken breasts, pound them until they're about 1/4" thick. In the center of each breast place 1/4 cube of better (cut lengthwise), some chopped green onions, ground white pepper, and tarragon.
Wrap this up like a burrito. Use toothpicks to keep it closed.
Dip in flour, then dip in eggwash, then dip in flour with salt and pepper.
Deep fry them.
Yum!

I got a quick and easy fruit salad for you that goes great with any meal.
1 Box of french vanilla instant pudding
2 15 oz cans of fruit cocktail (drained)
1 20 oz can of crushed pineapples(undrained)
116 oz tub of Cool whip
1 cup mini marshmallows (optional)
Mix pudding and pineapples well. Add fruit cocktail and marshmallows; stir. Add cool whip and mix everything together well. Enjoy!

Parmesan Chicken
6 bnls, sknls Chicken Breast
1 cup A/P flour
1 tsp. kosher salt
½ tsp. freshly ground black pepper
2 extra-large eggs
1 ¼ cups seasoned dry bread crumbs
½ cup freshly grated Parmesan cheese, plus extra for serving
Unsalted butter
Good olive oil
Cut chicken breasts into 1” strips, pat dry w/ paper towels.
On one dinner plate, combine flour, salt, and pepper. On a second plate, beat the egg w/ 1 Tbsp. of water. On a third plate combine the bread crumbs and parmesan cheese. Cot the chicken on both sides w/ the flour, then dip into the egg, then into the bread crumbs, pressing lightly.
Heat 1 Tbsp of butter and 1 Tbsp. of oil in a large sauté pan on medium-low. Cook chicken in batches on both sides until cooked through. Chicken is done when meat is opaque and juices run clear. Add more butter and oil to cook remaining batches as needed. Sprinkle more parmesan cheese on top of cooked chicken to serve.

Broccoli & Bow Ties
Kosher Salt
8 cups broccoli florets (about 4 heads)
½ lb. farfale pasta (bow ties), about 4 cups dry
2 Tbsp. butter
2 Tbsp. EVOO
1 tsp. minced garlic
zest of 1 lemon
1 Tbsp. freshly squeezed lemon juice
¼ cup toasted pine nuts (pignoli)
freshly grated parmesan cheese, optional
Cook broccoli for 3 minutes in large pot of boiling, salted water. Remove broccoli with slotted spoon or sieve; place in large bowl and set aside.
In the same water, cook the bow tie pasta according to package directions, or about 12 minutes. Drain well and add to the broccoli.
Meanwhile in a small saute pan, heat the butter and olive oil and cook the garlic and lemon zest over medium-low heat for 1 minute. Remove from heat, and add 2 tsp. kosher salt, black pepper, and lemon juice, and stir well. Pour over the broccoli and pasta. Toss well, and season to taste. Sprinkle with pine nuts and parmesan cheese, if desired, and serve. Serves 6-8

Lemon Pillow Cake
1 white cake mix
1 can lemon pie filling
Mix cake as directed on box and pour into a 9x13 pan. Place spoonsful of lemon pie filling in blobs over batter. Bake as directed on the box. Let cool completely. Cake batter covers blobs, so there will be pockets of lemony filling inside.
Frosting
1 can ready to spread lemon flavored frosting
1 tub of Cool Whip
Mix frosting and Cool Whip together and spread on cake. This does need to be kept refrigerated.
You can sub chocolate cake mix, chocolate icing, and cherry pie filling instead of lemon.
