Cut an "X' in the pointed end (opposite the stem scar) and par boil for 2 minutes. Drain the tomatoes, and drop into ice water for 1/2 minute. The skin should peel right off.

Instead off boiling water ,You can drop the tomato in a deep fyer for a few seconds ,than in to iced water ,that will make the skin peel off very easy as well.

If you are using seasonal tomatoes the blanching technique is perfect - after peeling i also cut them in halve (across the middle) and gently squeeze out the seeds, leaving only the meaty sections - good for sauces and stews now or jarred or frozen for later use. If you are using off season toms the skin is tougher to remove - I use a small sharp knife with a serrated edge and peel it like an apple - add some paste to boost the flavor and color - the texture is similar.

Scrape the skin w/ the blade of the knife, not cutting into it. Do that over about 1/5 of the tomato. Then cut and peel the skin off on the places you scraped. Continue scraping and peeling until it's done!

Bring a pot of water to a rolling boil.
Drop one tomato at a time in the boiling water for about 5 seconds.
Evacuate to a bowl of ice water long enough for the tomato to cool.
Use a knife to make a cut around the "equator" of the tomato. The "northern hemisphere" and "southern hemisphere" of the tomato will now slide off intact.

Do not leave the tomato in the boiling water too long, it will start to cook. The idea is to only break the connection between the skin and the meat.
Try not to puncture the meat of the tomato while peeling.
An alternative way to peel the skin off after cooldown would be to (carefully) slide it off with your fingers.
------>Warnings
Tomato is hot (only for a few seconds) when taken from the boiling water, so protect your hands.

If you need to peel a bunch of them, you can blanch them in boiling water and skins slip right off with little waste.
