I would really like to make dinner for my boyfriend and his family and I wanted to start out with Italian Wedding Soup but I'm clueless as to what entree I should serve with it. My boyfriend really likes Chicken Parmesan but I'm afraid it will be to heavy of a meal with the soup. Any suggestions?

Also, if there are any suggestions as to a light dessert to serve with this meal, I'd be very grateful!!!

DO CHICKEN FRENCH WITH RICE....

COAT CK BREASTS WITH FLOUR THEN EGG
SAUTEE IN FRY PAN WITH OLIVE OIL
IN SEPARATE PAN MELT A STICK OF BUTTER,
ADD 2 CLOVES OF CHOPPED GARLIC
SAUTE THAT, THEN ADD 1/4 CUP LEMON JUICE
1/2 CUP WHITE WINE
BRING TO AN 'ALMOST BOIL'
TURN TO A LOW HEAT
ADD SAUTEED CK BREATS
LET SIMMER FOR ABOUT 1/2 HOUR
COOK SOME WHITE RICE

VOILA!!!

Make baked chicken, mashed potatoes and a fresh steamed vegetable like asparagus. Buy Italian pastries or better, Italian cookies from a quality Italian bakery. Serve with coffee. Use a nice platter to serve. Your future mother-in-law will be somewhat impressed. If she's Italian, stay away from cooking Italian. It'll be compared to hers. Clean the chicken well, trim off excess skin and have no feathers or hairs in skin. Whatever you do, don't serve tomato sauce. Yours is not hers.

BTW, buy ground chicken to make the little meatballs for the soup. It makes the softest meatballs. For the pasta use Acini di Pepe. Very traditional. You can make the soup ahead. Just heat it before serving. Serve with grating cheese. Buy the good stuff, not Kraft. Have warm Italian bread on the table in a napkin lined basket.

Chicken parmesan sounds great as the entree. Maybe with some warm crusty bread.

Shrimp soup with sea stock and a bit of tomato, with tubettini or orzo pasta in it.
