I just got offer money to take pictures of my old high school's sports team playing. I have never taken photo's for money before (besides a few time I was able to sell some underwater pics to a magazine) but I want to make sure I do the best job possible.
The question I have is does the rule of 3rd's go out the window when you are taking sports photos. Do you try to center the subject for sports shots or do you still try to stick to the 3rds?

Shoot to the action, it's the theme and focus. You can crop later to a more pleasing composition or with more impact.
As far as worrying about things like the rule of thirds, you'll miss shots if you do.
Most of us, I'm referring to photographers in general, have gotten to the point where we compose subconsciously and don't think or worry about it. Even if we didn't do it subconsciously, I don't think many of us worry about it to much if it meant not getting the shots.
I haven't shot sports since covering High School football, basketball, and track for a local paper decades ago. But, for all shooting where action is the central point, I think the following wouldn't be to far off.
I used a monopod for stability and mobility.
Shutter speed was a minimum of 1/250 sec and usually 1/500 sec using ISO 400 film pushed to 1600.
If your shooting football, you have an awesome opportunity from the sidelines. Someone can tell you what the play is and that will let you know immediately where the action is. This is a God Send.

Shoot the action, crop to a more pleasing photo later. Sometimes the rule of thirds will sneak in.

use the thrids like this
if the person is running to the right compose them in the left of the frame so they are moving across it - show where they are going -not where they have been - avoid centered if you can
