If you are baking a cake and decide to subsitute applesauce for the cooking oil, do you only add the same amount of cups of applesauce as the recipe calls for with oil?
Example: My cake mix calls for 1/3 of a cup of oil, do I use 1/3 of a cup of applesauce instead?

I wouldn't substitute more than half the fat for applesauce. Substituting applesauce for fat is one of those things that is done commonly, and is almost universally mediocre in result. If you want a healthier cake, make angel food or some such. Subbing out fat for applesauce will lead to a cake which is a waste of calories because it won't taste good, and it will still have enough sugar to be not worthwhile. Subbing anything for fat, especially in baking, doesn't work well. If it worked well, the recipe would call for applesauce, not oil.

Substituting the applesauce for the fat makes a moister, denser cake. It will taste good but I found, at least with my fat-free homemade cookies, you need to zap them just before eating them to "freshen them up" or they lose their "freshness". Not sure what you would do with your cake - but you could use icing instead of frosting to try to hold in the moisture.

If you have to watch your fat intake, substituting the applesauce either whole or in part, is a good idea even though, as another answerer said, the flavor suffers. But, once you adjust to your low-fat diet, it won't bother you as much. I always say, take the fat out of what you can so you can have that occasional item with the fat. That's if you are on the low-fat/low-cholesterol diet. This naturally doesn't work for a person on a diabetic diet since you are just adding more sugar to the recipe.
