Im sick of having the same thing over and over again with chicken. I need some great new ideas.

Place 2-3 ponds of chicken in a baking dish (or the crockpot).
Stir together these ingredients and pur over:

1 c. brown sugar; 2/3 c. vinegar; 1/4 c Sprite or 7-Up, 3 T minced garlic, 2 T soysauce, 1 t. black pepper.

Bake at 400 for 40 minutes, or in the crockpot 8-10 hours. This is delicious, and smell fantastic while it cooks.

Chicken curry and rice.

Ingredients: 1 red pepper, 1 green pepper, 1 large onion. 2 pieces of garlic. 1 can of tomato pure 2 potatoes. 1 carrot, 1 apple 2 slices of pineapple, Breast of chicken, rice, salt, pepper - 1 cup of cooking cream, 1/2 cup of olive oil, curry powder and curry sauce(if you have it)

1. keeping aside the chicken breast cut in cubes, the pineapple the cooking cream, and the curry, chop or grate the rest into small pieces and place in a pot with a small glass of olive oil and stir fry slowly moving it with a wooden spoon. Add some pieces of chicken breast chopped very finely and leave all the ingredients to cook slowly. After a few minutes, when it starts to cook, add a glass of water but not much. After about half an hour of simmering all the ingredients should look saucy so then you add pineapple and curry sauce and curry powder and simmer for another 10 minutes adding a 1/2 glass of fresh cream in the last minute. If it looks too chunky you can liquidize it after.

2. Stir fry the chicken breast in a drop of oil on a seperate pan and add a pinch of curry powder. When the chicken is done, throw it into the pot with the other ingredients. ( test it for salting)

3, Serve with boiled white rice and Bon Appetite!!

INGREDIENTS
6 skinless, boneless chicken breast halves
6 slices Swiss cheese
6 slices ham
3 tablespoons all-purpose flour
1 teaspoon paprika
6 tablespoons butter
1/2 cup dry white wine
1 teaspoon chicken bouillon granules
1 tablespoon cornstarch
1 cup heavy whipping cream



DIRECTIONS
Pound chicken breasts if they are too thick. Place a cheese and ham slice on each breast within 1/2 inch of the edges. Fold the edges of the chicken over the filling, and secure with toothpicks. Mix the flour and paprika in a small bowl, and coat the chicken pieces.
Heat the butter in a large skillet over medium-high heat, and cook the chicken until browned on all sides. Add the wine and bouillon. Reduce heat to low, cover, and simmer for 30 minutes, until chicken is no longer pink and juices run clear.
Remove the toothpicks, and transfer the breasts to a warm platter. Blend the cornstarch with the cream in a small bowl, and whisk slowly into the skillet. Cook, stirring until thickened, and pour over the chicken. Serve warm

Easy Garlic Chicken Breasts:

4¼ hours 35 min prep
2 servings

1/4 cup lime juice
1/4 cup olive oil
1 tablespoon garlic, minced
2 boneless skinless chicken breasts
salt & pepper

In a medium bowl, whisk together the lime juice, olive oil, and garlic.
Season with salt and pepper generously, and add chicken, making sure it is well-coated with the marinade. Marinate chicken, covered in fridge for at least 3 hours and preferably overnight. Preheat oven to 400 degrees F.
Remove chicken from marinade and discard marinade. Arrange chicken breasts in a shallow baking pan.
Season with salt and pepper and roast for 25-30 minutes or until chicken is cooked through and the juices run clear when you prick it with a fork.

A Yummy , Easy Dish:
Place 4-5 Boneless Chicken Breasts in a Crock pot
(Frozen or thawed) in the Morning
Add 1 can of Cream of Celery or Cream of Mushroom Soup
1 can of mushrooms & 1/2 can of water or milk.
simmer on Low while You are at work all day.

I Add minute Rice when I get Home or serve over buttered Noodles.

Someone gave me this recipe. I make it all the time now. It is a family favorite!! Sometimes I substitute a large (2 lb) can of sweet potatoes if I am in a hurry.

Glazed Chicken with Maple-Orange Sweet Potatoes
Serves 4

3 sweet potatoes (about 2 pounds), peeled and cubed
2 tsp olive oil
4 four oz skinless, boneless chicken breast halves, pounded to 1/2 inch thickness
Salt and ground black pepper, to taste
1/4 cup orange juice
1/4 cup maple syrup
2 tbsp light brown sugar
1/8 tsp ground cloves

Place peeled and cubed sweet potatoes in a large saucepan and add enough water to cover. Set pan over high heat and bring to a boil, cook 3 minutes, drain and set aside.

Heat oil in a large, high sided skillet over medium-high heat. season both sides of chicken with salt and pepper. Add chicken to hot pan and cook 1 minute per side, until golden brown.

Whisk together orange juice, maple syrup, brown sugar and cloves. Pour mixture over chicken. Arrange sweet potatoes around chicken in pan.

Cook 10 minutes, uncovered, until chicken is cooked through, sweet potatoes are tender and maple-orange sauce is thick and bubbly.

1 whole chicken ,2 med onions,chopped,1 can of stewed tomatoes,1 large green pepper chopped,4 tblsp olive oil ,
3 tblsp paprika, 1/2 tsp salt ,1/2 tsp black pepper,1/2 tsp garlic powder ,1/4 c sour cream ,1 lb of med egg noodles
In large pot over med heat ,heat oil and onions untill onions are clear ,add paprika and stir. add chicken pieces and brown . add can of tomatoes (juice and all ),green pepper,and spices . Reduce heat and simmer for one hour to hour and a half untill chicken is done . Pull chicken pieces out and let cool untill you can take the bones out . While the chicken pieces are out add the sour cream and stir well . add the chicken pieces back in and simmer. while chicken is simmering boil water and cook egg noodles acording to pkg directions . serve chicken over noodles . Enjoy.

use Panko bread crumbs with chicken!
Take 5 boneless chicken breasts and clean them up.
Then spread about a half cup of flour onto a plate and season it. I used Emeril's Essence, but you can use anything. 2 eggs and then about a cup and a half of the Panko bread crumbs mixed with Parmesan cheese. ( I assume you know to put the flour, eggs and panko crumsb in 3 separate dishes :)
Place a cooling rack onto a baking sheet and spray it with Pam or any cooking spray. Then place each piece of breaded chicken on the rack.
Cook in the oven at 375 degrees for 20-25 minutes or until the tops are slightly browned.

You can take them out and add some pasta sauce and shredded mozzarella. Put it back in the oven and broil it just until the cheese melts. Serve over a bed of pasta and you have EASY chicken parmesan!!

One thing that I found that makes clean up easier is to use paper plates for the flour and the bread crumbs....then you can just toss them in the garbage!!!

Here's something fantastically easy--dip chicken breast tenders in melted margarine, coat with crushed cornflakes, and bake at 400 degrees for 25 minutes (10-12 pieces.)

Cooking spray
1 1/2 cups cooked chicken thigh meat, chopped
1/2 cup sour cream
1/3 cup shredded Mexican cheese blend (recommended: Kraft or Sargento)
1 (4-ounce) can diced green chiles
2 tablespoons chopped fresh cilantro leaves
1 teaspoon ground cumin
1 package egg roll wrappers
1 cup honey
3 tablespoons chopped pickled jalapenos
1 tablespoon cider vinegar
Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.
In a large bowl, combine chicken, sour cream, cheese, green chiles, cilantro, and cumin. Mix well to combine.

Arrange egg roll wrappers on a flat surface. Place a small amount of filling in the lower third (towards 1 corner) of each wrapper. Fold over the bottom corner of the wrapper, tightly roll up 1 turn and then fold in the sides. Dip your finger in water and run it along the corner and edge. Tightly roll up the rest of the way, sealing the edges and seam shut. Place "straws" on prepared baking sheet and spray with cooking spray. Bake 10 to 12 minutes, until golden brown.

Meanwhile, in a small bowl, combine honey, pickled jalapenos and vinegar. Mix well and serve alongside straws.
