-Store bought pizza crust, rolled out on pizza wheel.
-Combine chopped steamed broccoli, ricotta cheese, dried basil, dried oregano, minced fresh garlic,and a hand full of parm cheese (all of this can be eye-balled to the size of your pizza).
-Bake pizza crust at 400 degrees until just turning brown (very lightly browned).
-Remove from oven and spread with broccoli and cheese mixture. Top with grated mozzarella cheese and a drizzle of olive oil (I sometimes put a few tomato slices on top).
-Bake until crust is browned and cheese is bubbling.
-Enjoy!

Sliced red or yellow sweet peppers

You can make an interesting variation by using cream instead of tomato sauce as a base, then sprinkle a mix of mozzarella and swiss/emmenthal cheese, then put on the broccoli--this is a "white pizza."

Whole wheat crust, any cheese that you like...any.... broccoli, pineapple...or use several veggies like tomatoes, mushrooms, olives.... anything that you want.

Broccoli Pizza Pie

INGREDIENTS

* 2 pounds potatoes, sliced
* 1 pound broccoli, chopped
* 2/3 cup shredded Monterey Jack cheese
* 1/2 lemon, juiced
* 2 teaspoons minced garlic
* 1 tablespoon chopped fresh basil
* 3/4 teaspoon dried oregano
* 1/2 tablespoon dried parsley
* 2 (10 ounce) packages refrigerated pizza crust doughs
* 1 (14 ounce) jar pizza sauce

DIRECTIONS

1. Preheat oven to 400 degrees F (200 degrees C).

2. Bring a pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain.

3. Meanwhile, place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes; drain.

4. In a large bowl combine potatoes, broccoli, cheese, lemon juice, garlic, basil, oregano and parsley. On a pizza pan or baking sheet, roll out 1 pizza dough. Top with potato mixture and cover with second pizza dough; with moistened fingers seal edges of dough together.

5. Bake in preheated oven for 20 minutes, or until golden brown. Serve with warmed pizza sauce.

Mushroom Broccoli Pizza

INGREDIENTS

* 1 (.25 ounce) package active dry yeast
* 3/4 cup warm water (110 degrees F to 115 degrees F)
* 1 teaspoon olive oil
* 1/2 teaspoon sugar
* 1/2 cup whole wheat flour
* 1/2 teaspoon salt
* 1 1/2 cups all-purpose flour

* TOPPINGS:
* 3 cups broccoli florets
* 1 cup sliced fresh mushrooms
* 1/4 cup chopped onion
* 4 garlic cloves, minced
* 1 tablespoon olive oil
* 1/2 cup pizza sauce
* 4 plum tomatoes, sliced lengthwise
* 1/4 cup chopped fresh basil
* 1 1/2 cups shredded part-skim mozzarella cheese
* 1/3 cup shredded Parmesan cheese

DIRECTIONS


1. In a bowl, dissolve yeast in warm water. Add oil and sugar; mix well. Combine whole wheat flour and salt; stir into yeast mixture until smooth. Stir in enough all-purpose flour to form a soft dough.

2. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with nonstick cooking spray, turning once to coat top. Cover and let rise in a warm place until doubled, about 1-1/2 hours.

3. Punch dough down. Press onto the bottom and 1 in. up the sides of a 12-in. pizza pan coated with nonstick cooking spray. Prick dough several times with a fork. Bake at 425 degrees F for 6-8 minutes.

4. Place broccoli in a steamer basket; place in a saucepan over 1 in. of water. Bring to a boil; cover and steam for 5-6 minutes or until crisp-tender. Transfer broccoli to a colander. Rinse with cold water; drain and set aside.

5. In a nonstick skillet, saute mushrooms, onion and garlic in oil until mushrooms are tender. Spread pizza sauce over crust. Top with mushroom mixture, tomatoes, broccoli, basil and cheeses. Bake at 425 degrees F for 12-14 minutes or until crust is golden and cheese is melted.
