this one is quick and easy. Make sure you top it with granulated sugar before baking :-)

Classic Shortbread

1/2 cup butter at room temperature
1/3 cup powdered sugar (unsifted)
1/4 teaspoon vanilla
1 cup flour (unsifted)

Using the back of a large spoon, cream the butter until it is light. Cream in the powered sugar,
then the vanilla. Now work in the flour. Knead the dough on an unfloured board until nice and smooth.

Spray the shortbread pan very lightly with a non-stick vegetable oil spray. Put the ball of dough in the
middle of the pan, and working out from the center, firmly press the dough into the pan. Prick the entire
surface with a fork, and bake the shortbread right in the pan at 325 degrees for about 30-35 minutes,
or until it is lightly browned. Be sure that the middle is thoroughly cooked and doesn't look slightly
opaque or the shortbread might stick in the pan.

Let the shortbread cool in the pan for about 10 minutes before you loosen the edges with a knife and
flip the pan over onto a wood cutting board. If the shortbread does not come right out, hold the pan upside down over the cutting board and firmly tap one edge of the pan against the board. This should loosen the shortbread and it should drop out. Cut the shortbread into serving pieces while it is still warm.

Let the pan cool before washing it in the sink or dishwasher.

Here's a really really easy one if you have peanut butter.

Peanut Butter Cookies

Prep: 10 min. Bake: 15 min.

Preheat over to 325F. Mix 1 cup Peanut Butter, 1/2 cup sugar and 1 egg until well blended. Roll into 24 balls; place, 2 inches apart, on ungreased baking sheet. Flatten with fork. Bake 15 minutes or until lightly browned. (Do not overbake.) Makes 2 dozen cookies or 24 servings, 1 cookie each.

I like to make cinnamon rolls out of biscuit dough.

Make homemade dough (flour, salt, butter, leavening, milk or water), roll into rectangle, brush w/ milk or melted butter, sprinkle w/ cinn-sugar, then roll up into a tube. Cut into slices (will be spiral-looking), top w/ dot of butter, and bake as biscuit recipes calls for.

A Chess Pie or Buttermilk Pie is also pretty simple. So are vanilla pudding, shortbread cookies, or even sugar cookies.


Buttermilk Pie

• 3 eggs
• ½ cup butter, softened
• 1 ½ cups white sugar
• 3 T. all-purpose flour
• 1 cup buttermilk
• 2 t. van. Extract
• 1 deep dish pie shell

Preheat oven to 350º. Beat eggs until frothy; add butter, sugar, and flour. Beat until smooth. Stir in buttermilk and vanilla. Pour into pie shell. Bake about 60 min. Check and cover with a foil tent when the top gets brown at about 35 min. Serve with a dollop of cool whip on top.

Shortbread

1 Cup butter, room temp

3 C All Purpose flour
1 tsp vanilla
pinch salt

Whisk dry ingredients well. Beat butter and vanilla until fluffy. Add dry ingredients to butter. Mix just until combined. Press or roll out to about 3/8" thick, and cut into small squares or use simple cookie cutter. Prick a few holes in each, or use the tines of a fork. Place on parchment paper. Dust tops w/ a bit of granulated sugar to make them sparkle. Bake at 325ºF for approx. 15 mins or til golden brown. about 3 dz. Cool on racks; store room temp in airtight container.

Butter Pecan Cookies
Yield: 12 cookies

¾ cup pecans
½ cup (1 stick) unsalted butter
1/3 cup granulated sugar, plus more for coating
1 tsp. vanilla
1/8 tsp kosher salt
1 cup A/P flour

Preheat oven to 350ºF. Toast pecans until fragrant, about 6 minutes. With an electric mixer, cream butter and 1/3 cup sugar until light, about 1 minute. Beat in vanilla, salt, and flour, scarping sides down, beating just until dough comes together. Too much beating will make a less tender cookie. Fold in toasted pecans. Divide dough into 12 pieces, rolling each into a ball and then rolling each ball into sugar. Place 3” apart on a baking sheet, and flatten w/ the bottom of a glass. Sprinkle tops with more sugar. Bake until golden brown, rotating baking sheet half-way through, about 15 min. Sprinkle w/ a bit more sugar while hot, remove to wire rack to cool.

Best in the World Sugar Cookies

3 cups all purpose flour
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp nutmeg
20 Tbsp. unsalted butter softened but firm
1 cup sugar
1 large egg
2 tsp vanilla

Preheat oven to 375ºF. Whisk dry (first 4) ingredients together, set aside. Cream butter and sugar. Add egg and vanilla. Blend in dry ingredients just until incorporated. Chill dough at least two hours. Roll out half of the dough 1/4 inch thick and cut out. (or some into a ball and pressed into circle w/ bottom of a glass) Place 1” apart on greased baking sheet. Bake in middle rack of oven for 10 minutes.
