It's called a Turducken, for lack of a better word, but in the fine restaurants you tend to see this in, they usually have another, more obscure name for it.
The chicken and the duck are deboned completely so they roll up quite small. The turkey is also deboned except for the wings and legs so on the outside it looks like a normal turkey. Then, the whole thing is sliced and in each slice you get each kind of bird.
The dish itself isn't necessarily the most pleasing. I always found the flavours to not quite "go" together but it is mostly a way for the chefs to show off their creativity and for people to say "well, i had turkey, duck and chicken for dinner last night, la dee da".

Not only does it exist (although its a chicken in a duck in a turkey), called Turducken, but you can get it already prepared and ready for heat and serve from cablelas.com.

It is a real dish. The duck and chicken are deboned so they fit inside of the turkey. We had it last Thanksgiving and it was not a big hit. Noone really liked it at all.And it looks weird.

No, it's a chicken inside a duck, inside a turkey. A Turducken.
The chicken and duck are boneless, and they leave the wings on the turkey so it looks pretty normal when you roast it.

This would be called "Turducken" - it does exist and I havent tried it personally, however you can find all kinds of recipes for it onlnine at foodnetwork.com or allrecipes.com. Its typically a holiday meal entree.
