I have a smaller one, I think the temp on high goes up to about 350-400, while on low the bottom temp is about 190. Try using a meat themoter to measure what you are cooking, and the temp of the crock pot.

Some fancier ones will have temp guidelines marked on them

I'm not exactly certain, but the crockpots of today (as oppsed to the 1970's) reach a temp well over 145ºF, keep the food out of the "danger zone" prime for bacterial growth and multiplication. Even on Low or Keep Warm, your food is safe.
