I tried out a new recipe last night and it didn't rise as well as my other recipes.

What could I have been doing wrong?

Biscotti aren't suppoed to be very thick, but a flat loaf that you slice, then bake a 2nd time to dry them out.

That said..... check the date on your baking soda and bakign powder. They are probably old (or got wet from himidity) and need to be replaced.

Even just the tiniest bit too much baking powder or baking soda will keep the biscotti from rising well as will too little yeast.

biscotti doesn't actually rise much, I suppose it would depend on the recipe. My tried and true biscotti recipe raises so little you wouldn't notice it! So you may not have done anything wrong, it may just be the new recipe.

Biscotti shouldn't rise. If you think it came out too flat add baking soda or baking powder.

Yeast has a shelf life...baking powder and soda as well. If any of these are old they will not work.
