Fruit Kabobs with Margarita Dip
Start to Finish: 20 minutes
Ingredients
1/2 cup whipping cream
Angel and/or pound cake cubes
Assorted fresh fruit (strawberries, cubed melon, and/or seedless red or green grapes)
1/2 cup dairy sour cream
1 3-ounce package cream cheese, cut up and softened
1/4 cup sifted powdered sugar
1 tablespoon tequila
1 tablespoon orange juice concentrate
1 tablespoon lime juice
Directions
1. For margarita dip, place sour cream, cream cheese, powdered sugar, tequila, orange juice concentrate, and lime juice in a blender container or food processor bowl. Cover; blend or process until combined. Add whipping cream. Cover; blend or process until fluffy and mixture mounds. Serve immediately or cover and chill up to 24 hours.
2. Arrange small skewers of cake and fruit on a serving platter. Serve with dip. Makes 1-3/4 cups dip (enough for 12 servings.)

MANGO SALSA
12 roma tomatoes, seeded, diced
1 red onion, diced
5 jalapenos, diced(add 1/4 habenero pepper for extreme heat)
2 mangos, diced
1 cup finely chopped cilantro
1 tsp salt
1 tsp ground cumin
1 tsp chilli powder
1/2 cup olive oil
1/2 cup freshly squeezed lime juice
1 tbsp tobasco or other pepper sauce
MIx all of the ingredients together. Refridgerate for 1 hour and then serve. Keep in mind that the salt will draw out the juices from the ingredients and so the mixture may have to be drained from time to time. Save the juice for Bloody Mary's or Caesar.

PAPAYA SALSA
4 c. peeled, diced papaya (or mangoes)
1/2 c. finely diced Bermuda onions
1 jalapeno pepper, seeded & chopped
1/4 c. coarsely chopped fresh coriander
1 tbsp. Kosher salt
1/4 c. fresh lime juice
Combine all ingredients in glass bowl. Let sit in refrigerator at least 2 hours.

PEACH SALSA
3 firm peaches (about 1 lb.) - 1 pound of canned peaches can be substituted
1 tbsp. lemon juice
2 ripe tomatoes (about 1/2 lb.)
6 large green onions
1 tbsp. canned jalapeno peppers, chopped
1 tbsp. cilantro, coarsely chopped (fresh coriander) - (optional)
12 tbsp. good quality olive oil
6 tbsp. sherry vinegar
2 tbsp. honey
Dip peaches into boiling water and then peel the skins. Cut peaches into thin strips, discarding pits. Toss with lemon juice. Dip tomatoes into boiling water, then peel and seed them. Cut into medium julienne strips. Combine peaches and tomatoes. Add onions, peppers and cilantro, if using. Mix. Whisk together oil, vinegar and honey. Pour over other ingredients. If using within several hours, no need to refrigerate; otherwise cover and refrigerate.

SALSA GUACAMOLE
Guests will rave about this combination of fire roasted salsa and guacamole -- you'll make it again and again!
Salsa:
1 can (14.5 oz) Muir Glen® organic fire roasted or plain diced tomatoes, well drained
1/4 cup chopped onion
2 tablespoons chopped fresh cilantro
1/4 teaspoon coarse salt (kosher or sea salt)
1 clove garlic, finely chopped
1 small fresh jalapeño chile, seeded, finely chopped
Guacamole:
3 ripe large avocados (about 1 1/2 lb) pitted, peeled
2 tablespoons fresh lime juice
1/2 teaspoon coarse salt (kosher or sea salt)
1/2 teaspoon red pepper sauce
1 clove garlic, finely chopped
In medium bowl, stir together salsa ingredients.
In another medium bowl, place avocados; coarsely mash. Stir in remaining guacamole ingredients. Spoon guacamole into shallow serving bowl; top with salsa.
Serve with tortilla chips as desired.
Makes 12 servings (1/4 cup each).
Tip: Look for avocados that are firm, but yield to gentle pressure. If they are not quite ripe, place avocados in a paper bag, and let ripen at room temperature.

1/2 onion, minced
1 tablespoon vinegar
1 chopped green chile, or to taste
salt and pepper to taste
Mash together the tomato and avocados. Stir in remaining ingredients.
Serve with warm tortillas.
Optional: Mix in pomegranate seeds for added color and a unique but authentic variation.

Heart Healthy Fruit Ball
16 oz. fat-free cream cheese, softened
2 (15 1/4 oz.) cans fruit cocktail in own juice, drained and chopped fine
1 (5 oz.) box instant vanilla pudding mix
1/4 C. almonds, chopped and toasted
In a medium-size mixing bowl, mix together cream cheese, fruit cocktail and instant pudding mix.
Shape mixture into a ball, then roll in almonds.
Serve with graham crackers.
Makes 32 servings.
Approximate values per serving: 50 calories, 1 g fat, 2 mg cholesterol, 3 g protein, 9 g carbohydrates, 0 fiber, 112 mg sodium, 11 percent calories from fat

Though used as a veggie, the tomato is technically a fruit, so here is my party suggestion:
chop up avocado
chop up tomato
mix the two together in equal parts
add a splash of balsamic vinegar
add a splash of olive oil
add a little salt and pepper to taste
Not only is it easy, but it is beautiful (very colorful!) And for a pretty healthy food, it is also pretty filling because that avocado has healthy fats in it.

Heres an idea. Have fun.
Mandarin Chicken Bites
5 dozen 55 min 35 min prep
2 boneless skinless chicken breasts
1 3/4 cups chicken broth
1/4 cup soy sauce
1 tablespoon Lea & Perrins Worcestershire Sauce
1 lb fresh spinach leaves, rinsed and stemmed
8 cups boiling water
2 (16 ounce) cans mandarin oranges, drained
Dip
1/4 cup mayonnaise
1/4 cup sour cream
2 teaspoons curry powder
3 tablespoons apricot preserves
Cut chicken into 1-inch cubes.
In a 10-inch skillet, combine chicken cubes, broth, soy sauce and Worcestershire.
Heat to boiling over medium heat; cover, reduce heat, and simmer until chicken is fork-tender (about 10-15 minutes).
With a slotted spoon, remove chicken from broth and let cool slightly.
Place spinach leaves in a colander.
Pour boiling water over leaves.
Drain and set aside to cool.
Place a cube of chicken at stem end of a spinach leaf and wrap leaf around chicken so that chicken still shows on sides.
Secure end of leaf with a wooden pick.
Refrigerate at least 1 hour.
(Recipe can be prepared up to this point one day ahead.) To serve, place one mandarin orange at the end of each wooden pick.
Serve with Curry Mayonaise Dip (recipe follows).
Curry Mayonaise Dip: Blend all ingredients and refrigerate to allow flavors to mature

This is simple, and can be an appetizer or dessert.....
Apple Cake
4 cups diced apples
2 cups sugar
1 cup raisins
1 cup oil
2 eggs, beaten
1 cup walnuts
2 cups flour
2 ½ cups apple juice
2 t baking soda
2 t cinnamon
1 tsp salt
Mix apples, sugar, raisins, salt. Let stand 1 hour
Add oil, eggs and walnuts.
Sift in flour, baking soda, cinnamon and salt.
Pour into greased cake pan, 350 degrees for 1 hr and 15 minutes. Let cool 15 minutes before serving.

The Best Ive had was red grapes in a pudding of some sort. Try Vanilla Yogurt & Something else (cream cheese?) But , just enough pudding to completley cover every Grape. Serve in Dixie cups ;) tee hee
(i heard vegans like dixie cups)

Take a large fruit bowl.Or a platter with sliced fruit laying around a bowl of dipping sauce.The sauce can be a little orange juice with confectioners sugar mixed well.(1box sugar and add juice a little at a time til smooth)

Pumpkin Spice Muffins(no butter, and no oil!)
1 box spice cake
1 15-oz can pumpkin
1/4 C. water
Cream Cheese Frosting (optional)
Mix cake mix, pumpkin and water together. No eggs or oil are needed, as the pumpkin adds the necessary moisture. Line muffin pan with cupcake liners. Bake according to directions on the cake mix box for cupcakes. Remove and let cool.
Frost with cream cheese frosting; Serve.

Pears poached in red wine and cinnamon or just a ripe tropical fruit salad with mango, pineapple, kiwi, papaya and strawberries, fruit salad is always popular. put the fruit in layers but do not mix and sprinkle lots of sugar on top.
