French Dip-Crock Pot Recipe
8 servings ½ day 5 min prep
1 (5 lb) rump roast
1 tablespoon garlic powder
1 tablespoon black pepper
1 teaspoon seasoning salt
1 teaspoon oregano
1/2 teaspoon rosemary
2 instant Oxo or bouillon cubes
2 (14 ounce) cans beef broth
1 large onion, diced
Place all ingredients in a crock pot.
Cook on High for 5-6 hours or Low for 8-10.
Remove the meat from the crockpot and place on a deep plate-to collect juices.
Strain the broth well so that it is clear and no spices or onions remain.
Place in a saucepan and keep warm.
Most people prefer to keep the broth as is but you can stir in a small amount of cornstarch mixed with cold water to thicken it up just a touch.
(remember to add the juices that drain off the meat) Heat Hoaggie buns to warm and slice the meat thin.
Place a good amount of sliced meat in each of the buns and offer the Aus Jus in individual ramekins.

I love using my crock pots! I have 3 different sizes depending on what I want to make.
For ham or turkey - with or without the bone - a very simple recipe is to place the pork or poultry in the crock pot. Add 12 ounces of sprite or seven up, then add enough water to entirely cover the meat or poultry. I put it on low and allow it to cook 8-10 hours. Perfect - moist and juciy. Great for a meal - just add side dishes, perfect for sandwiches. Something about the soda makes it great.
Chili - just throw all the following into the pot and allow to cook 8 -10 hours on low.
1 diced onion
1 can tomato sauce (large can)
1 can diced or crushed tomato (large can)
1 drained can of each of the following beans - pinto (light & dark), black, navy
1 - 2 pounds ground beef (can subsitute ground chicken for all or part of the beef)
1 bottle dark beer (optional)
2 packets chili seasoning mix (McCormicks)
1/2 cup water
Serve with rice, crackers, cheese or anything else you like. I use my huge pot when I make this - adding extra of each ingredients to suit our taste. Freezes well!
Often I just throw a roast in the crock pot with carrots, onion and potatoes. Add some herbs, a splash of wine and enough liquid to cover the top of the roast. Low setting 8-10 hours.

This is a favorite of mine...
Crock-Pot Italian Beef
Any kind of roast
1 can of beer
2 large onions
3 packages of Zesty Italian Dressing mix
1 jar of Italian marinated vegetables (by the jarred veggies)
2 jars pepperoncinis
Hoagie buns
*any cheeses (pepper jack is my fave)
Set your crock-pot on High and add the roast. Pour the can of beer over the roast. Quarter the onions and scatter them in the pot over and under the roast. Dump in the 3 packets of Italian dressing mix, the whole jar of marinated veggies with juice, and the pepperoncini's (juice too).
Leave the pot all day... at least 5 hours... The longer it cooks... the more tender it will become. Sometimes I start mine the night before to let it simmer all day. Then when you're ready to eat, pull the meat apart and serve over hoagie buns. I top mine with cheese and add the extra pepperoncini's from the remaining jar. For some reason plain potato chips go wonderfully with this sandwich! Enjoy!

This is one of my all time favorites, and I always give this recipe to folks who want something a little bit different. It is an authentic recipes, and was given to me by the owner of a Mexican restaurant. I just modified it for the crock pot. It is quick, easy, and has minimal ingredients:
Mexican Style "Carnitas"
1. Line your slow cooker with a Reynolds Slow Cooker Liner for easy cleanup.
2. Take a good sized pork loin roast and season it liberally with salt, pepper, and ~believe it or not~ cinnamon.
3. Place roast in slow cooker.
4. Add in 2 medium sized sliced white onions.
5. Cook in your slow cooker on high for 6 hours or on low for 10 hours, until the meat is tender and flakes easily.
Serve with Spanish Rice, flour tortillas, and garnish with lime (which can be squeezed on the meat if desired)
This recipe sounds simple, but tastes like you slaved over it for hours!

Country Beef Stew
INGREDIENTS:
* 2 lbs. stew beef or round steak, cut in 1-inch cubes
* 4 medium carrots, sliced
* 3 cut onions
* 6 potatoes, cut up
* 3 ribs celery, sliced
* 28 oz. can whole tomatoes cut up (juice also)
* 1 c. water
* 6 tbsp. quick cooking tapioca
* 3 tbsp. Worcestershire sauce
* Pepper and salt to taste
* Ground allspice, marjoram, thyme to taste
* 2 bay leaves
* 1 (10 oz) pkg frozen sweet peas, thawed
PREPARATION:
Put all ingredients except peas into a slow cooker. Cover and cook on LOW for 8 to 10 hours. Turn to high and add frozen peas 30 to 45 minutes before serving.

Rather than give you a single recipe, I am going give you the name of a great cookbook. Go buy Fit-It and Forget-It Cookbook by Dawn Ranck and Phyllis Pellman Good. It is just crock-pot recipes, and it has something for every taste. I haven't found a dud recipe in there yet!

Go to the grocery store, and try the already made ready to throw in the crock pot dinners, they're made by Banquet...and I make them all the time, and hubby and kids just love them, theres a pot roast, a chicken n herb with noodles, and roast beef, and beef stroganoff....just to name a few, you just add hot water, turn it on and whalla....dinner will be ready when you get home from work!!! If you like saurkraut this is easy ,,fast and delicious..I put a pork roast and some saurkraut in it with some sliced onions on the bottom and some fresh garlic in the meat and put it on low for 8 hrs.... We just had some the other day,,its great for a cold winter night

Beef With Red Wine Sauce
--Southern Living, FEBRUARY 2006
Prep: 15 min., Cook: 6 hrs.
3 pounds boneless beef chuck roast, cut into 1-inch pieces
1 medium onion, sliced
1 pound fresh mushrooms, sliced
1 (1.61-ounce) package brown gravy mix
1 (10 1/2-ounce) can beef broth
1 cup red wine
2 Tbsp. tomato paste
1 bay leaf
Hot cooked egg noodles or rice
Garnish: chopped fresh parsley
Place first 3 ingredients in a 6-quart slow cooker.
Whisk together gravy mix and next 3 ingredients; pour evenly over beef and vegetables. Add bay leaf.
Cover and cook on HIGH 6 hours, or LOW for 9 hours. Remove and discard bay leaf. Serve over noodles. Garnish, if desired.
Yield: Makes 6 servings

Easy Crockpot Beef Roast
1 chuck or rump Beef Roast (sized for your crockpot)
1/2 Cup of Water
1 Packet of Ranch Dressing Mix
1 Packet of Italian Dressing Mix
1 Packet of Brown Gravy Mix
Put roast in crockpot, pour water around the base. Sprinkle all 3 dry seasoning packets over roast. Cover and cook for 6-7 hours on low. Remove roast to cutting board and let sit 15 minutes; slice thinly across the grain (electric knife works best).

Crockpot Brown Sugar Chicken
2 lbs boneless, chicken pieces (I use breasts)
1 c. packed brown sugar
2/3 c. vinegar
1/4 c. lemon lime soda (Sprite)
2-3 T. minced garlic (I used 3 cloves)
2 T. soy sauce
1 t. black pepper
Place chicken in Crockpot. Combine remaining ingredients, pour over chicken. Cover, cook on low for 6-8 hrs.
Serve over rice or noodles.
To thicken sauce, combine 1 1/2 T. cornstarch with 2 T. of water and add to the Crockpot, cook on high for 30 minutes longer.
