My kids love this recipe and I make it at least once a week ... I don't know if you can even call it a recipe because there are only two ingredients! I bake skinless boneless chicken breasts and when the chicken is almost done (like maybe five more minutes left) I pour a light zesty italian salad dressing over the chicken. I pop it back in the oven for a few minutes, and viola! Great tasting chicken and hardly no calories not to mention only one dirty casserole dish! I zap a bit of fresh dressing on the chicken once it's on the plates, sometimes over pasta (tri color is always good!), and serve with a fresh green salad, a baked potato and the meal is finished.

I saw this in a SHAPE magazine and tried it and it tasted great! It is an awesome replacement for fried chicken.

You will need
Boneless skinless chicken breasts
crushed Corn Flakes cereal
Egg whites
seasoning (what ever you prefer, I like McCormicks Season-All and a little garlic salt)

Heat oven to 350 degrees. Add seasoning to the crushed cornflakes and mix well in a large bowl or plate. Dip your chicken breasts in the egg whites, making sure it is completely covered. Roll the chicken in the cornflakes untill the entire breast is covered with a nice layer. Place on a lightly greased cookie sheet on the middle oven rack. Bake for 25 min, turn chicken over, then bake for another 25 min.

why no salads? there are sooo many possibilities, and you can up the vitamin quotient by adding all those lovely veggies...

anyway, easiest recipe: boneless skinless chicken breasts, season with salt & pepper, grill or broil them & serve with brown rice & a dark green leafy vegetable. variations: marinate them in a little soy sauce, rice vinegar & sesame oil, then grill, broil, or slice & sautee or stir fry with tons of broccoli, cauliflour, carrots, green and/or white onions.

the key to "low fat/cal" & "healthy" is the boneless, skinless part. use your imagination for flavoring. don't buy pre-packaged sauces or marinades, make your own so you can control the oil, sugar & salt.

Place a thin sliced boneless, skinless chicken breast on a sheet of aluminum foil. Add sliced vegetables, onions, mushrooms, etc on top of the chicken. Season it however you want...just pepper and garlic, soy sauce, lemon juice, butter, a tablespoon of cream of chicken soup, whatever. Wrap the foil, folding it over to make a little packet. Bake it in the oven at about 350 degrees for about 20 minutes. Works with fish too, but fish takes less time to cook, so be sure the veggies are sliced thinly so they cook too.

grill a skinless chicken fillet salt and pepper both sides. cook till spaghetti, make a chiili maranade, finely chop a red chilli, a juice of 1/2 lemon, a bit of lemon zest, slat pepper and olive oil combine.
when pasta is done pour in large bowl, shread the chicken mix with pasta and pour over maranade. simple tasy and only 340 cals per typical bowl
