I just read in my Cook's magazine about pie dough. They said to make the perfect pie dough, substitute half the cold water with cold vodka. The vodka will cook out but because of the alcohol, it allows the dough to remain light. If you used all water and added extra for easier handling, it could make the dough tough.

I haven't tried it yet but it sounds interesting. You won't taste the alcohol.

The secret to perfect dough is perfect measuring. When you are dealing with pastry, you must be exact...measuring the dry ingrediants with dry cups, liquid in liquid cups, scraping the flour, etc off with a knife to level.... being very exact when kneading, etc.
Cutting the fat into the dry ingrediants is also important, getting the fat distributed evenly...
