Very interesting. I know what I personally would do--nothing--but I wonder how the extreme environmentalists would answer this. I've got an even more extreme scenario for you and this one is supposed to be real:
What do you do if a village in a third world country doesn't have a fresh water supply, but any viable locations for a proposed well are inhabited by endangered species?
Well if you are one of the environmental groups, you forbid the drilling of the well and make the people continue to walk miles to hand carry their daily supplies of fresh water. The plants and animals are placed above basic human needs.
That is just SO WRONG!

It would be like a twilight zone episode. The animal would eat the plant and the plant would end up being poisonous and killing the animal....muahahahahahahaha.

you have to send your least favorite coworker over to them to say , excuse me mr Asian Tiger, but you really mustn't eat endangered plants, then he will turn around and eat them, instead , thus saving the plant and also providing extra nutrition for the tiger.
