Serving ostrich as a turkey breast would be abuse to one of the best tasting meet.
Ostrichfilet should be prepared as the best tenderloin.
Very nice sauces to go: wild mushrooms with cream, honey-tarragon sauce, spicy lemon sauce.

I like to take an ostrich (or Emu) steak, flour it, brown it in a little oil, add some broth made with soy sauce, a little coffee, black pepper and water and braise it until tender.
