some banna bread recipes are too dry
some are too moist...
how can I make a really good bannana Bread?

Banana Bread
Prep: 25 minutes
Bake: 55 minutes

Ingredients
2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 eggs, beaten
1-1/2 cups mashed banana (5 medium)
1 cup sugar
1/2 cup cooking oil or melted butter or margarine
1/4 cup chopped walnuts
1 recipe Streusel-Nut Topping (optional)

Directions
1. Preheat oven to 350 degrees F. Grease bottom and 1/2 inch up the sides of one 9x5x3-inch or two 7-1/2x3-1/2x2-inch loaf pans; set aside. In a large bowl combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Make a well in center of flour mixture; set aside.

2. In a medium bowl combine eggs, banana, sugar, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Fold in nuts. Spoon batter into prepared pan(s). If desired, sprinkle Streusel Topping over batter.

3. Bake for 55 to 60 minutes for 9x5x3-inch pan or 40 to 45 minutes for 7-1/2x3-1/2x2-inch pans or until a wooden toothpick inserted near center comes out clean (if necessary, cover loosely with foil the last 15 minutes of baking to prevent overbrowning). Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on a wire rack. Wrap and store overnight before slicing.

4. Makes 1 loaf (16 slices)

5. Streusel-Nut Topping: In a small bowl combine 1/4 cup packed brown sugar and 3 tablespoons all-purpose flour. Using a pastry blender, cut in 2 tablespoons butter until mixture resembles coarse crumbs. Stir in 1/3 cup chopped walnuts.

Ingredients

1 cup mashed ripe banana (2 to 3 medium)
1/2 cup margarine or butter, softened
3 tablespoons milk
2 eggs
1 cup toasted walnuts

Directions
1. In a large mixing bowl combine 1 cup of the flour, the sugar, baking powder, baking soda, and salt. Add mashed ripe banana, margarine or butter, and milk. Beat with an electric mixer on low speed until blended. Beat on high speed for 2 minutes. Add eggs and remaining flour; beat until blended. Stir in walnuts.

2. Pour into two greased 8x4x2-inch loaf pans. Bake in a 350 degree F oven for 50 to 60 minutes or until a wooden toothpick inserted near the centers comes out clean. Cool 10 minutes. Remove from pans; cool thoroughly on wire racks. Wrap and store overnight, for easier slicing. Makes 2 loaves (32 servings).

Make-Ahead Tip: Up to 1 month ahead, make and bake banana bread. Cool completely. Place each loaf in a freezer bag and freeze for up to 1 month. Thaw for 1 hour at room temperature before using.

2. In a large bowl stir together the egg whites, banana, sugar, and oil. Add flour mixture all at once to banana mixture. Stir just until moistened (the batter should be lumpy). Spoon batter into prepared pan.

3. Bake in a 350 degree F oven for 45 to 50 minutes or until a wooden toothpick inserted near the center comes out clean.

4. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on rack. Wrap and store overnight before slicing. Makes 1 loaf (16 servings).

I actually just made this recipe today. The bread is slightly moist but the crust is nice and crispy.

2 ripe mashed bananas
1/2 cup water
1 1/2 cups dark brown sugar
1/2 cup vegetable oil
2 large eggs, slightly beaten
1 3/4 cup flour
1 tsp baking soda
3/4 tsp salt

Heat at 350 for 70 minutes.

to find some great recipes i recommend joining allrecipes.com, or simply visiting the site. they have tons of recipes with reviews so you can get others opinions before you try them. as far as a good banana bread, go for lots of bananas, they have lots of flavor and moisture, which will also cut down on the need for lots of oil and butter. healthy and delish!
