Whats a good way to cook a fresh bluefish?
It's a 5 pounder ,and about 3 inches thick.
If I put it in a pan, how to season it?
Is it too thick to cook in one piece?

No, it is not too thick to cook in one piece. A good way to cook this would be to poach it.

Place the fish in a baking pan. Add 1 cup of white wine and a quarter cup of lemon juice. Pour water in the pan until the fish is almost covered.

Cover the pan with parchment paper and a layer of foil over that. Place into an oven set at 350 F. It will take maybe 20 - 30 minutes.

A better to way to test it to see if it is done is to use an instant read digital thermometer. These can be purchased at any kitchen store. Place the tip of the thermometer into the middle of the thickest part of the fish. When the thermometer reads 145 F, it is done.

Carefully lift the fish out of the liquid and serve.

Beer battered then grilled skin side down with a little grated parmassean, dried oragano, and dried basil sprinkled on top. Don't flip it, all the oilswill seep back into the fish and make it taste fishy. And grilling skin side down the whole time makes the fish easier to seperate from the skin when you take it off the grill.

I've actually had the cheese and herb mixture make the fish deceptive. It's fish, but it almost tastes like chicken. Trust me, I love fish. But I think if you didn't tell folks who hate fish what this was they might think they were eating chicken.

I have taken to cooking fish in the microwave. Put it in a covered casserole or whatever and add a couple of tablespoons of water put the lid on and cook as long as your microwave book suggests. The water creates steam and the lid keeps it in and the fish comes out really moist.

the fish can be cooked whole by baking, or can be fileted and broiled or pan fried.

some people like breaded fish, but a better idea is putting fresh citrus and herbs inside and salt and pepper.

I would fillet a fish this size and either saute or steam the fillets. You could also poach the whole fish in white wine or stuff it with aromatic vegetables and bake it.
